Despite having lived in York (UK) for six months during my study-abroad jaunt in college, I don't know the answer to this question. Yorkinite, perhaps?

So if you can have a New Yorker, and a person from the county of
Yorkshire would call themselves a Yorkshireman or a Yorkshirewoman, what
about a resident of the city of York? Is it different for York, England
than for other Yorks - Canada, for instance?

I say -

Yorkist.
