It seems to me that there is a relationship to the final letter of the town/country etc. If it is a vowel, or a liquid sound, then you add 'ian' - i.e. Cantabridian. If it is a consonant, then you add 'er' - i.e. 'Londoner, New Yorker'. This doesn't work all the time, but it's a start... But then there's Bostonian (sigh(
