Garage: I've heard several ways at least. Garridge (uncommon) G(uh)Raahzh,
G(uh)radge (most common)
Cafe: Kaffay (almost invariably, but perhaps with slight variations of
emphasis - either KAFFay or K'Fay), Kaff (a deliberate joke). 

But... Baggage? I've truly only ever heard Bagg(uh)dge...how do Americans
pronounce it? B'gaahzh?

The (uh) is y.a. attempt to indicate a neutral vowel.
